Pork adobo with sitaw is a good dish that you can prepare for your family during ordinary days.It is delicious,easy to cook,and perfect when paired with a warm cup of rice.I got a chance to give theregular pork adoboa twist by cooking it with snake beans or sitaw.It is simply regular pork adobo with sitaw added towards the end.
I got the idea while checking my inventory in the fridge.I saw some extra snake beans.I got it as an ingredient for thesinigang na hiponthat we enjoyed over the weekend.I was about to cook regular pork adobo,but I opted to add the remaining sitaw for two reasons: (1) I don't want the remaining sitaw to go to waste (2) it has been a while since I had this.I cannot remember how good it was.
Well,I'm glad that I did this dish.It was really yummy!However,I lost control and was able to consume more than a cup of rice (I won't tell you the exact count,hihi).It is like having adobong sitaw and pork adobo at the same time.
There is a small difference between this recipe and regularadobong sitaw.This is tastier,probably because of the fat from the liempo.It is also a bit sweet (in a good way) because of the brown sugar.I'm glad that I did this.

Pork Adobo with Sitaw
- 1 ½ lb pork belly cut into serving pieces
- 10 pieces snake beans sitaw,cut into 2 inch length pieces
- 1 medium onion
- 5 tablespoons soy sauce
- 2 ½ tablespoons vinegar
- 5 cloves garlic crushed
- 1 ½ tablespoons brown sugar
- ½ teaspoon ground black pepper
- 2 杯 beef broth
- 3 tablespoons cooking oil
Combine pork,soy sauce,ground black pepper,and garlic.Mix well.Let it stay for 15 minutes.
Heat oil in a cooking pot.
Sauté the onion until it gets soft.
Add the marinated pork including the remaining soy sauce and garlic.Cook for 5 minutes in medium heat.
Pour the beef broth in the pot.Let boil.Cook in low heat for 45 minutes or until the pork gets tender.Note: add more beef broth or water if the liquid starts to dry out.
Add the vinegar.Allow the liquid to re-boil.Stir.
Put the string beans in the pot.Cook for 3 minutes.
Add brown sugar.Stir.Continue to cook for 5 to 8 minutes.
Transfer to a serving bowl.Serve!!
